Scoop out and discard pulp and stem of the cherry tomatoes. Invert tomatoes
onto paper towels to drain.
Meanwhile, slice mozzarella cheese stick into rounds, about 1/2 inch thick, and
wash fresh basil leaves. Pat dry. Invert tomatoes, sprinkle with sea salt, and
drizzle with EVOO. Wrap a leaf of basil around the cheese round, then insert
into a tomato.
