A Spicy Chicken Entree

In Honor of Cinco de Mayo--May 5
If you like a little heat in your food,  here is a delicious dish---seriously.
My husband said he had never tasted a better chicken breast--score!

I adapted it from a recipe in the KAET Channel 8 Arizona State University
H is for Hot & Spicy cookbook. The recipe was sent in by T. J. Froggatt,
who just made it up from ingredients she hand on hand. Don't you think
that is how a lot of the best recipes come to be?

I switched it up some with what I had on hand and was thrilled with the results.
I would definitely serve this to company, that's how good it was.

Coco-Verde Chicken with Lemon Rice 



1 small lemon
2 cups rice (your choice--jasmine, basmati, or brown, which is what I used)
2 or more red peppers--sliced in thin strips 
2 jalepeno peppers--remove seeds--sliced in thin strips
1 large onion--sliced in thin rings
4 boneless chicken breasts
2 tsps. kosher or sea salt
2 tsps. pepper
1 tsp. hot paprika
1 tsp. each garlic powder and garlic clove (minced)
1-14 ounce can lite coconut milk
1-7 ounce can salsa verde
1 ounce vegetable oil

Juice the lemon. Prepare the rice, adding lemon juice to the water while
cooking.  While rice is cooking, saute the peppers and onion in vegetable
oil.. Rinse and dry chicken breasts. Combine salt, pepper, paprika, garlic
powder and garlic clove to make a rub. Sprinkle both sides of chicken with
rub, pressing it into the chicken with the back of a spoon or your fingers.

Cut the chicken in strips and saute in vegetable oil. Add the veggies. Add a
little water to the pan to scrape up all the brown goodness from the chicken.
Combine the coconut milk and salsa verde and add to the pan. Season to taste
and let all the flavors marry into a delicious dish. Don't let the chicken dry out.
Serve over a bed of rice.  

It may not look like much but it is delicious!
